Food Finds: Cordobesita: A better take on empanadas

Food Trucks are all the rage. And while this was technically a stand, it represented Cordobesita, the Argentinean food truck, and it was at the Marco Island Farmer’s Market.

The first thing that caught my eye was the baked empanadas. It’s about time we find a convenient, healthier option for these delicious finger foods.

Cordobesita offers empanadas in organic spinach and cheese, organic corn and cheese, a no nitrates ham and cheese, a no antibiotics ground chicken and a lean ground beef.

I loaded up on all of them, except the ham and cheese. I just don’t like ham that much. Each was amazing, but my favorite was the ground chicken. The texture, taste and quality were as good as the unhealthy variety, without all those things I don’t need.

Cordobesita also offers ham and cheese and sausage breakfast sandwiches. Perhaps my favorite find here was the alfajores, tea-like cookies with a dulce de leche center. Yummers!
